Tzatziki Sauce
Greek/Mediterranean Food is one of my favorite types of cuisine. There is a restaurant called Daily Bread that I have been going to ever since I moved to Miami. It's AMAZING!! They have the best Falafel, Hummus and Baklava just to name a few items. They even have a market on-site with some of the most incredible grocery items that you just can't find everywhere. I don't know exactly when I decided to learn to make my own Tzatziki, but I did. I thought it made sense so that I could have it whenever I wanted. I love Tzatziki with Falafel and especially with Lamb. Whenever I cook a Rack of Lamb, I like to have some Tzatziki Sauce on the side. This recipe is so simple to make, you may even want to have some on hand just to dip your veggies in! Some recipes call for shredding the cucumber. I prefer to chop it. I also like using an English Cucumber because they are seedless so you don't have to seed and extract any excess liquid. One more benefit is that the skin on an English cucumber is very thin, so I do not even peel it. This recipe can be made a day ahead of time.
