I was able to easily create this recipe because I had a lot of leftover beef tenderloin from a prior dinner party. If you do not have leftover beef tenderloin or steak, you could just buy a steak or 2 and cook it however you like. Let it come to room temperature, cut it into bite size pieces and use for this amazing recipe. You will not be disappointed. Next time I make this and I don't have any leftover tenderloin, I will just buy a few boneless rib eye steaks to use. That would be just as good!

Ingredients
  • 1 Piece of Flat Bread (see my easy recipe for Rosemary, Thyme and Garlic Flat Bread)
  • 1 TBS Extra Virgin Olive Oil
  • 1 TBS Butter
  • 1/2 Large Onion, sliced thin
  • 1 Garlic Clove, minced
  • 1/2 tsp Fresh Thyme Leaves
  • 2 TBS Balsamic Vinegar
  • About 6 oz. Cooked Steak, cut into bite size pieces
  • 1/2 Cup Blue Cheese, preferably Stilton
Directions
  • Step 1 Preheat oven to 325 degrees
  • Step 2 In a saute pan heat the olive oil and butter on medium heat
  • Step 3 add onions and cook while stirring for about 15-20 minutes until caramelized
  • Step 4 Add garlic and thyme to the onions and continue to stir for another 1-2 minutes
  • Step 5 Add balsamic vinegar to deglaze the pan then remove from heat
  • Step 6 Cover the flat bread with the onion mixture first
  • Step 7 Spread out the cut up steak all over the piece of flat bread
  • Step 8 Add chunks of blue cheese all over the flat bread
  • Step 9 Carefully, using a really large and long spatula, place the flat bread directly on rack in the oven and bake for about 8-10 minutes
  • Step 10 Remove from the over and let sit for about 5 minutes before cutting into 4 or 6 pieces
