I had Chicken Parm for lunch the other day and it was really good. I haven't made it in years! When I started thinking about it, I realized that it's a pretty popular dish and that I had all of the ingredients in my pantry. I decided to make it and document the recipe for the blog. It's doesn't require much time and can easily be made last minute on a weeknight. And like I always say, homemade is ALWAYS better! You can serve this with spaghetti and maybe a nice green salad on the side. You can even skip the pasta all together and just enjoy it with a nice salad or a green vegetable.

Ingredients
  • 1 large Chicken Breast, at least 8 oz.
  • 1/2 cup Breadcrumbs
  • 1/2 cup Parmesan Cheese, divided
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Thyme
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Flour
  • 1 egg, beaten
  • 1 cup Tomato Puree or Marinara Sauce
  • 1 cup Mozzarella Cheese, shredded
  • 3 TBS Extra Virgin Olive Oil
  • 2 TBS Fresh Parsley, chopped (for garnish)
Directions
  • Step 1 Pre-heat oven to 425 degrees
  • Step 2 Split the chicken breast in half so that you have 2, place between a big piece of wax paper and pound thin with a meat mallet (to about 1/4 inch thick)
  • Step 3 In a bowl add breadcrumbs, 1/4 cup Parmesan Cheese, Basil, Oregano, Thyme, Garlic Powder, Salt and Pepper
  • Step 4 In another bowl, crack the egg and beat with a fork
  • Step 5 In a separate bowl add the flour
  • Step 6 Make sure to dry the chicken with a paper towel before dipping in the flour first
  • Step 7 Shake off excess flour and dip in the beaten egg
  • Step 8 Evenly coat the chicken breasts with the bread crumb mixture and set aside on a plate
  • Step 9 Heat the olive oil in a heavy skillet on medium-high heat
  • Step 10 When the pan is hot, cook the chicken breasts for about 2-3 minutes on each side or until slightly browned
  • Step 11 In a baking dish add the tomato puree then top with each chicken breast
  • Step 12 Cover each chicken breast with the shredded mozzarella cheese then the remaining parmesan cheese
  • Step 13 Bake uncovered for about 20-25 minutes or until a meat thermometer reads 160 degrees

  • I don’t think I’ve ever had chicken parmesan before BUT this looks and sounds delicious ! I’ll have to add it to my “to do” dishes

  • I think I have commented on your Chicken Parm in the past but I was browsing your recipes today and the picture looks so delicious! I just printed the recipe again and I am going to pull chicken from the freezer and make this for dinner one night this week with my homemade pasta sauce and spaghetti squash.
