Blistered Grape Tomatoes and Mozzarella Cheese Flat Bread

I just love tomato season! There are so many things you can do with them. Bloody Mary's, Sliced Fresh and topped with a little EVOO and lemon alongside a nice piece of fish, a nice gazpacho for those extra hot summer days....... the possibilities are endless. Tomatoes are also great roasted or blistered on top of the stove as this recipe calls for. Add a little garlic and some dried herbs and you have a perfect topping for a delicious flat bread.
Ingredients
- 1 Piece of Flat Bread (see my easy recipe for Rosemary, Thyme and Garlic Flat Bread)
- 1 TBS Extra Virgin Olive Oil
- 1 cup Grape Tomatoes, sliced in half lengthwise
- 1 Garlic Clove, minced
- 1/2 TBS Dried Rosemary
- 1/2 TBS Dried Thyme
- Salt and Pepper to taste
- 1/2 Cup Shredded Mozzarella Cheese
- 1 TBS Shredded Parmesan Cheese
Directions
- Step 1 Preheat oven to 325 degrees
- Step 2 Heat oil in a saute pan and add sliced tomatoes
- Step 3 Cook on medium heat while stirring for about 8-10 minutes
- Step 4 Add garlic, herbs, salt and pepper and stir to combine for another 1-2 minutes then remove from heat
- Step 5 Cover flat bread with shredded mozzarella cheese
- Step 6 Add the tomatoes on top of the mozzarella cheese and spread all around
- Step 7 Sprinkle parmesan cheese on top of the flat bread
- Step 8 Gently place directly on rack in oven and bake for about 8-10 minutes
- Step 9 Remove from oven and let rest for about 5 minutes
- Step 10 Cut into 4-6 pieces and serve
