Fresh Corn Saute with Bacon, Peppers and Onion

My mom used to make this dish when I was growing up. I would watch her cook in the kitchen all the time and eventually she started letting me help her. There are so many recipes that were never written down, but are stuck in my head and this is one of them. This is a dish we would have on a Sunday. My friend Lisa calls it Mommy's Corn. The most time-consuming part of this recipe is shucking the corn and cutting the kernels off the cob. After that, it's a breeze. This recipe is definitely for a cheat day! There are so many ways this can be lightened up and one day I will work on that. But for now, this is how my mom made it.

Ingredients
  • 12 ears of fresh corn on the cob
  • 12 oz bacon cut into pieces, cooked until crisp then drained on a paper towel (reserve the bacon fat for later)
  • 2 green bell peppers seeded and finely chopped
  • 2 onions finely chopped
  • 1 cup milk
  • 8 TBS salted butter
  • 1 1/2 TBS kosher salt
  • 2 tsp fresh cracked black pepper
  • 2 TBS sugar
Directions
  • Step 1 Shuck all the ears of corn and rinse under cold water until clean
  • Step 2 Using a large bowl, cut the kernels off the corn cobs into the bowl.  Using the dull side of the knife, scrape the cob to get all the corn milk as well then set aside when done
  • Step 3 Finely chop the green bell pepper and onion
  • Step 4 Cut the bacon strips into small pieces in a large sauté pan and cook until crisp, then drain on a paper towel reserving the bacon fat for later
  • Step 5 In a very large frying pan or dutch oven (it’s a lot of corn!) add the leftover bacon fat and heat on medium high heat
  • Step 6 Add the green pepper and onion to the pan and saute for about 3 minutes
  • Step 7 Add the fresh corn kernels to the pan and mix into the peppers and onion
  • Step 8 Add the cooked bacon, salt, pepper and sugar and stir to combine
  • Step 9 Add the milk and stir to combine
  • Step 10 Add the butter  and stir to combine
  • Step 11 Lower heat a little and continue to cook uncovered for about 30 minutes more while stirring occasionally
