Miso Glazed Salmon
This recipe is inspired by one of my favorite neighborhood spots. It's literally around the corner from my house. They have a great menu, awesome food and an exceptional happy hour every day. Their Miso Salmon is one of my favorite dishes. However, it comes with a very hefty price tag! One day I said enough and went to work on creating my own recipe and this is what I came up with. I am happy to say, it is just as good and far less expensive. Salmon happens to be my favorite fish however, you can make this dish with any type of fish - whatever your favorite is. Tip: I used white miso paste, but red will work just as well. Just keep in mind that the red miso paste will have a much stronger flavor. You can also use fresh ginger instead of ground if you have it on hand. I'm always gonna repeat myself here, there are no rules when cooking! Feel free to leave out ingredients you don't like or add others that you think will enhance the dish. Adjust the measurements according to your taste buds! Always taste as you go and adjust accordingly. I am normally not a cook who measures, but am doing so in order to document and share my recipes. However, feel free to make them your own! I serve this dish with a side of steamed broccoli and/or sugar snap peas.
Ingredients
- 2 lbs salmon cut into 4-8 oz fillets
- 2 heaping TBS white miso paste
- 1 TBS sesame oil
- 2 TBS dark brown sugar
- 2 TBS tamari or low sodium soy sauce
- 1 TBS rice wine vinegar
- 1/4 tsp ground ginger
- 1 clove garlic minced
- 1 dash of fish sauce (optional)
- 2 tsp sesame seeds
- Salt and Pepper to taste
- Cooking spray
Directions
- Step 1 Combine the miso paste, sesame oil, brown sugar, tamari or soy sauce, rice wine vinegar, ground ginger, garlic clove and fish sauce (if using) into a bowl and whisk to combine
- Step 2 Combine the salmon and about 1/4 cup of the miso glaze in a ziplock bag. Let the fish marinate in the fridge for about 30 minutes up to an hour max
- Step 3 Turn the broiler on high and place the rack on the 3rd level in the oven
- Step 4 In the meantime, on medium heat toast the sesame seeds in a dry saute pan until you can smell them – make sure to watch closely or they will burn. Set aside for later
- Step 5 Line a baking sheet with foil and coat with cooking spray
- Step 6 Place the marinated salmon fillets on the baking sheet, season both sides with salt and pepper and broil for about 5 minutes
- Step 7 Remove from oven and brush the salmon with more of the miso glaze and continue to broil for another 3-4 minutes for medium-rare fish
- Step 8 After plating the fish, drizzle each fillet with the remaining miso glaze and sprinkle with the toasted sesame seeds
