It's Cinco de Mayo! So I thought it was the perfect day to experiment with some new Mexican recipes. Especially since Mexican is one of my top 3 favorite cuisines. I have a friend with several mango trees so I have a lot of them in my freezer all cut up in ziplock freezer bags. This is great because this particular Margarita is made in the blender. Since the mango is frozen, you don't have to use as much ice. I just treat the frozen mango like ice cubes. I also grated some fresh ginger for this one. I find that ginger goes very well with the mango. Ginger has a bite to it and is spicy so to add to that I garnished this with some fresh slices of jalapeno. I used Patron Silver for this recipe, but use your favorite! I served it over ice.

Ingredients
  • 1 cup of frozen mango
  • 1-2 inch piece of fresh ginger grated or minced
  • 2 limes zested - divided
  • 1 /4 cup fresh squeezed lime juice
  • 2 TBS simple syrup
  • 1 cup Tequila
  • About 4-5 ice cubes
  • 3-4 slices of a jalapeno for garnish
Directions
  • Step 1 Combine the mango, ginger, zest from 1 lime, lime juice, simple syrup, Tequila and ice cubes in a blender. Blend until ice cubes have liquified and everything is nice and smooth
  • Step 2 Serve in a Margarita glass over ice and garnish with zest from the other lime and 3-4 slices of jalapeno
