Mushroom and Goat Cheese Flat Bread

Mushrooms are my favorite! I love them on pizza, in omelets, as a side with a nice juicy steak or on this delicious flat bread loaded with 3 different kinds of cheese!
Ingredients
- 1 Piece of Flat Bread (see my easy recipe for Rosemary, Thyme and Garlic Flat Bread)
- 3 Large Portobello Mushrooms, sliced thin
- 1 Garlic Clove, minced
- 1 Shallot, sliced thin
- 1/2 tsp Dried Thyme
- 1 tsp Extra Virgin Olive Oil
- 1 tsp Butter
- 1 TBS Balsamic Vinegar
- 1/2 Cup Shredded Mozzarella Cheese
- About 4-5 oz. Goat Cheese
- 1 TBS Shredded Parmesan Cheese
- Salt and Pepper to taste
- Fresh Thyme Leaves, for garnish
Directions
- Step 1 Preheat oven to 325 degrees
- Step 2 Heat oil and butter in a saute pan then add the mushrooms. Stir with a wooden spoon while they cook on medium heat for about 8-10 minutes
- Step 3 Add garlic, shallot and thyme and stir to combine for another minute or two
- Step 4 Season with a little salt and pepper, continue to stir
- Step 5 Deglaze the pan with the balsamic vinegar and remove from heat
- Step 6 Cover the flat bread with the shredded mozzarella cheese first
- Step 7 Add the mushroom mixture on top of the mozzarella cheese
- Step 8 Cover the flat bread with little dollops of the goat cheese all over
- Step 9 Place the flat bread directly on the oven rack and bake for about 8-10 minutes
- Step 10 Remove from over and let rest for about 5 minutes
- Step 11 Garnish with Fresh Thyme Leaves from about 2-3 stems
- Step 12 Cut into 4-6 pieces and serve
