Parmesan Potato Salad
I used to go to this really great restaurant in Downtown Evanston called The Wild Asparagus many years ago. It was very gourmet. They had lots of fancy salads, sandwiches and other unique items on their menu. I went with my friend Leanne when we used to work together. We would go there at least a few times a week! One of the things you could order was a plate that had a variety of salads (chicken, potato, green, etc.). One of the salads I always ordered on that plate was this salad. I can't remember if this is what they called it - I just know how amazing it tasted! One day I was fooling around in the kitchen at home and came up with this recipe. This was over 20 years ago! Ever since then, it's become a favorite for anyone who has ever tasted it. Me and my sister are always asked to make and bring to parties. It's so easy and has just 4 ingredients (not counting salt and pepper)! Trust me, you're gonna love it! A little (or big) tip, this potato salad is so much better the next day! Try to plan ahead!
Ingredients
- About 3 lbs. Red Potatoes with the Skins Left On
- 8 oz Shredded Parmesan Cheese (reserving a little for garnish)
- 1 Bunch Sliced Green Onions (reserving a little for garnish)
- 1-1/2 Cups Mayonnaise
- 2 tsp. Kosher Salt
- 1 TBS Fresh Cracked Black Pepper
Directions
- Step 1 Scrub potatoes and boil in a large pot of salted water until knife tender
- Step 2 Drain potatoes, cut in half and fully cool in the fridge
- Step 3 In the meantime, mix together the sliced green onions, shredded parmesan cheese and mayonnaise – store in the fridge until the potatoes have cooled
- Step 4 After the potatoes have completely chilled, cut into large chunks and add to the cheese mixture
- Step 5 Add salt and pepper and gently toss to keep potatoes intact
- Step 6 Sprinkle extra parmesan cheese and green onion on top for garnish

I discovered this potato salad with you and believe me, you make it perfect. Since that time many years ago, it is a staple at my families picnics and gatherings. Absolute BEST potato salad ever. And it brings back some really, really great memories. That is what food and meals do, create great memories with the ones we love. You, my friend are great at creating great memories with your amazing meals.
Cheese makes everything better in my book and this potato salad with all that cheese is definitely one I want to try now. Why didint I think of that before!

Parmesan needs to be used more in recipes. I love the sharp, creamy flavor it gives when added.
