Not Your Traditional Meatloaf (Chicken and Portabella Mushrooms)

So..... Meatloaf........... I find that people either love it or hate it. I love it and so did my Grandfather. My Grandmother made Meatloaf for him all the time. After she passed away, he would often ask me to make it for him. The funniest thing is that whenever I did make it for him, he would always come in the kitchen - EVERY SINGLE TIME - and say, Tam Tam don't forget to put the ketchup on top! I mean, every single time I made it, he would remind me of this one thing that my Grandmother always did. Of course, I would never forget that. I would just say, I won't Papa! 🙂 . So..... this meatloaf is not the traditional one that I always made for my Papa. I do not know if he would even like this one to be honest. I have re-invented the traditional Meatloaf with this one that was made with ground chicken and portabella mushrooms. Don't get me wrong, I still love and will make the traditional Meatloaf with beef however, now I do add ground pork to it and sometimes maybe even ground veal as well. But usually I do try to eat a little healthier unless I am entertaining or on vacation. You could always substitute the ground chicken for turkey if you like. Also, if you don't like mushrooms, just leave them out. I did add a little extra onion and green pepper, but you can do your own thing. I know that I've mentioned this before, that I don't usually measure too much when cooking so........... But that's the cool thing about cooking! Do you!!! Add what you like and subtract what you don't!! I like flavor so I knew it wouldn't mess this Meatloaf up if I happen to add a little extra onion and bell pepper. Also (sorry Papa) but I had to elevate the ketchup topping for this one. I think you'll like it. As for what to serve with it, I personally like smashed califlower or brown rice and any green veggie such as broccolini roasted with olive oil, crushed red pepper flakes and salt and pepper. Ingredients
  • 1 cup portabella mushrooms, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tsp minced garlic
  • 1 TBS chopped fresh parsley
  • 1 TBS chopped fresh cilantro
  • 1 tsp chopped fresh tarragon
  • 1 cup ketchup, divided
  • 3 TBS Worcestershire Sauce
  • 1 egg
  • 1/2 cup uncooked old fashioned oats
  • 4 TBS dark brown sugar
  • 1 TBS red wine vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1-1/2 tsp salt
  • 1 tsp pepper
  • 2 lbs ground chicken
Directions
  • Step 1 Pre-heat oven to 350 degrees
  • Step 2 In a large bowl add the mushrooms, onion, green pepper, garlic, parsley, cilantro, tarragon, 1/2 cup ketchup, 2 TBS Worcestershire sauce, egg, oats, ground chicken, salt and pepper
  • Step 3 Mix well with a fork or your hands, but do not over-mix
  • Step 4 Shape meatloaf into an oval shape on a lightly oiled baking sheet and set aside (feel free to use a loaf pan)
  • Step 5 In a small mixing bowl, add remaining 1/2 cup ketchup, 1 TBS Worcestershire sauce, red wine vinegar, brown sugar, garlic powder and onion powder
  • Step 6 Mix to combine and spread over the meatloaf
  • Step 7 Bake for about 1 hour or until meatloaf reaches 165 degrees
