These Peanut Butter Chocolate Chip Oat Cookies are so good and are a healthy breakfast alternative! I like to have one or two with my coffee in the morning. You can swap out ingredients and add others that you enjoy more and if you're cutting back on fat grams, you can do what I do and use half peanut butter and half PB2 Power! I use chunky peanut butter so that I don't have to add nuts. One day I'll try to make with adding some shredded coconut. You can eat them room temp or warm in the micro. Hope you enjoy!

Ingredients
  • 1 cup mashed banana - about 2 medium
  • 1-1/2 cup old fashioned oats
  • 1/3 cup chocolate chips
  • 2 scoops protein powder
  • 1/4 cup ground flaxseed
  • 1 TBS chia seeds
  • 1/2 cup peanut butter
Directions
  • Step 1 Pre-heat oven to 350
  • Step 2 Line a baking sheet with parchment paper and spray with cooking spray
  • Step 3 In a large mixing bowl, add banana and mash with a fork
  • Step 4 Add remaining ingredients and mix everything to combine
  • Step 5 With a regular tablespoon, take a heaping amount and place onto baking sheet and continue this process until all of the mixture is used up – this recipe makes about 16 cookies
  • Step 6 There is no need to mash or press down once on the baking sheet – although they will not spread, just make sure the cooking aren’t touching each other
  • Step 7 Place baking sheet on middle rack in the oven and bake for about 10-12 minutes
  • Step 8 Once finished cooking, let cool then place in an airtight container. The cookies will keep for about a week (longer in the fridge), but I am sure they won’t last that long!
