Wild Alaskan Sockeye Salmon Cakes

Salmon is my favorite type of fish and I usually have it for dinner about 2-3 times a week. To change things up, I decided to create this recipe for Wild Alaskan Sockeye Salmon Cakes. I love fresh herbs and always like to use a mixture of 2 or 3. In this recipe I mixed chives, dill and parsley - but feel free to change it up with whatever you like. I usually serve these over a plate of mixed greens, but you can also have them as burgers. Just like crab cakes, you can make a nice sauce or dressing to serve with the Salmon Cakes. Check out my recipe for Fresh Herb and Greek Yogurt Dressing. I love tossing some greens with this dressing and having a Salmon Cake on top! This recipe makes 6 Salmon Cakes, but if you don't eat them all, they're great left-over and they also freeze well - especially if you have a vacuum sealer.

Ingredients
  • About 1-1/4 lb. wild alaskan sockeye salmon
  • 2 eggs, lightly beaten
  • 3 TBS greek yogurt
  • 2 TBS worcestershire sauce
  • 1/2 cup red onion, finely chopped
  • 3/4 cup red bell pepper, finely chopped
  • 1 cup bread crumbs
  • 3/4 cup fresh herbs, chopped (chives, dill, parsley)
  • 1-1/4 tsp garlic powder, divided
  • 1 tsp onion salt
  • salt and pepper to taste
  • 3 TBS extra virgin olive oil
Directions
  • Step 1 Pre-heat oven to 350
  • Step 2 Line a baking sheet with parchment paper and spray with cooking spray
  • Step 3 Set the salmon fillets skin side down on the baking sheet and brush with a little extra virgin olive oil
  • Step 4 Season salmon with salt, pepper and 1/4 tsp garlic powder
  • Step 5 Place baking sheet on the middle rack in the oven and bake for about 15 minutes
  • Step 6 In a mixing bowl, add the lightly beaten eggs, greek yogurt, worcestershire sauce, chopped red onion, chopped red bell pepper, bread crumbs and chopped fresh herbs
  • Step 7 When salmon is done cooking, let it cool completely
  • Step 8 Remove skin from the salmon fillets and flake the salmon apart with a fork and add to the mixing bowl with the other ingredients
  • Step 9 Add remaining 1 tsp garlic powder, onion salt, salt and pepper
  • Step 10 Mix with a fork to combine well
  • Step 11 Check and adjust seasoning, if necessary
  • Step 12 Form 6 Salmon Cakes and place on a large plate
  • Step 13 Heat a large frying pan over medium-low heat and add the extra virgin olive oil
  • Step 14 Add Salmon Cakes to the hot frying pan and cook for about 4 minutes per side – remember the salmon is already cooked
  • Step 15 Serve over a plate of mixed greens tossed with my delicious Fresh Herb and Greek Yogurt Dressing
